Flavorah Concentrates for Whipped Cream

Flavored whipped cream is one of the simplest and most rewarding applications for Flavorah concentrates. A few drops transform plain heavy cream into a custom-flavored topping for desserts, beverages, and fruit. Because Flavorah is highly potent, you get intense flavor without adding excess liquid that would destabilize the whipped cream.

Recommended Usage Rates

• Whipped cream: 0.2-0.5% by weight (3-6 drops per cup of heavy cream)
• Stabilized whipped cream: same rates, add before whipping
• Whipped cream charger (dispenser): add 3-5 drops per charge

Technique

Add Flavorah concentrate to cold heavy cream before whipping. As the cream aerates and thickens, the flavor distributes evenly throughout. For best results, chill your bowl and whisk as well. If using a stabilizer like gelatin or cream of tartar, add the concentrate at the same time. Do not add concentrate after the cream is fully whipped, as folding can deflate the texture.

• Mocha whipped cream: combine Flavorah Coffee at 3 drops and Flavorah Milk Chocolate at 3 drops per cup
• Cinnamon whipped cream: add Flavorah Cinnamon at 2 drops per cup for pumpkin pie or apple desserts

Use water-soluble concentrates for whipped cream. Oil-soluble products can inhibit proper whipping and foam formation.
