Flavorah Concentrates for Fudge

Fudge is a rich, dense confection that benefits from Flavorah's potent flavor concentrates. The high sugar and fat content of fudge carries flavors extremely well, and Flavorah's concentrated formula means you can add bold flavor without altering the texture or setting properties of your batch.

Recommended Usage Rates

• Standard fudge: 0.25-0.75% by weight (typical 0.5%)

Technique

Add Flavorah concentrate during the cooling phase, after the fudge has been cooked to temperature and removed from heat but before it sets. Stir the concentrate in quickly and evenly. Adding during the cooling phase rather than during cooking preserves the most flavor, since the high temperatures of candy cooking can drive off volatile compounds.
